A tasty, healthy alternative and a vegetarian style spaghetti sauce recipe I created. Even if you don't like tofu much, you can't taste it. These ingredients can be cut in half. This makes 3 quart bags to freeze too.
2 - 12 oz packages extra firm tofu, cut into 1 inch cubes
1 - medium onion finely chopped
90 ounces of tomato sauce
2 teaspoons chopped dehydrated garlic
2 teaspoons dried Italian Season (add more to taste if you'd like)
4 tablespoons dried sweet basil
1 tablespoon salt
2 - 3 cups dried grated Parmesan cheese (add the third cup for desired taste)
Combine all ingredients in a quart pan. Bring to boil and then back it down to simmer. Simmer for 2 - 3 hours. A lid may be placed but does produce a runnier sauce.
