Mustard Bagel Dog Recipe from scratch

1 cup warm water
1 ½ teaspoons salt
2 Tablespoons white sugar
3 Tablespoons deli mustard – a flavorful mustard. Even a hotter mustard will not overtake the flavor
OPTIONAL: 1 to 2 Tablespoons of ketchup may be added and/or 1 to 2 Tablespoons of relish
½ cup dehydrated minced onion
1 ¾  cups white flour
1 cup whole wheat flour
¼ cup corn flour (not cornmeal)
2 ¼ teaspoon active dry yeast
9 – 12 hot dogs or bun length hot dogs.
Put ingredients in bread machine pan in this order: water, salt, sugar, mustard, dehydrated onion, and flours. Then place yeast in center top of these ingredients. Additional water or flour may be necessary to have a smooth dough ball.
Set bread machine to “Dough Cycle.”
When dough cycle is done, remove bagel dough. Lightly flour surface and roll out dough to about 1/16” inch thick in about a 14 inch wide by 17 inch long rectangle. Cut rectangle lengthwise into thirds if using bun length hot dogs (you should get 3 bagel dogs from one strip of dough). If using regular length hot dogs, cut rectangle lengthwise into fourths (You should get 4 bagel dogs from one strip of dough). If dough doesn’t cover dog enough, just press dough to length of dog or length you like. Lay hot dog lengthwise and cut dough a little shorter than dog. Start rolling dough around hot dog and there will be some excess to pinch together. Repeat this process.
Cover bagels and let rest for about 10 to 15 minutes.
In a 4 1/2 quart pan:
2 quarts of water
4 ½ Tablespoons white sugar
Old dishtowel to lay bagels on after removing them from boiling water
Preheat over to 375 degrees F. Place 4 ½ quart pan with water and white sugar on stove and bring to a boil.
And 2 to 3 bagels at a time to boiling water. Let boil for 25 to 30 seconds. Take slotted spoon and turn bagels over to boil another 25 to 30 seconds on other side. Remove with slotted spoon and lay bagels on an old dishtowel to dry some and slightly cool. Repeat this process for remaining bagels.
Spray cookie sheet with non-stick spray. I prefer Bakers Joy and like to use the Air Bake cookie sheets. Place bagels on prepared cookie sheet.
Bake in oven for 20 to 25 minutes. Bagels will turn golden brown. Additional time may be needed but only increasing 5 minutes at a time.
