Egg Meat Cheese Breakfast Burrito Casserole Recipe

Breakfast Burrito Casserole is an alternative to filling and rolling the traditional way. This somewhat healthy recipe has with the type of tortilla used. The majority of these products come from Costco. Created in the kitchen of Robin Harley.
Egg Meat Cheese Breakfast Burrito Casserole Recipe

3 Flax seed Uncooked Tortillas
4 to 5 eggs
1 small packet of green chili (about 1/2 cup)
Precooked bacon bits (about 1/2 to 3/4 cup)
Lunch meat Ham (about 1/2 cup chopped up)
1 1/2 cups cut up sliced cheddar cheese (not processed cheese)
9 inch pie dish
Salt or pepper may be added it you like but there was none added in this recipe.

Lightly spray 9 inch pie dish with Baker's Joy

Preheat oven to 400 degrees

Cook 3 flax seed tortillas, one at a time, in skillet until lightly brown on each side or beginning to bubble. Remove from skillet and set to the side.

Beat eggs and scramble in same skillet. Add green chili, stir and cool a couple minutes. Add bacon bits and ham, stir and cook a few more minutes.

Line pie dish with 1 tortilla,layer some of the egg mixture on top, and sprinkle cheddar (cheese covering egg mixture with cheese). Add another tortilla and repeat layering. Add last tortilla.

Bake in 400 degree oven for 20 to 25 minutes.

NOTES: Recipe can be altered in many ways: Substitute type of tortilla, meats or cheeses.
